Sheet Pan Beans & Grilling Cheese

An easy, deliciously seasonal dinner that lets the oven do all the work.

Ingredients:

2 lbs beans
2 cloves garlic, sliced
1 pint cherry tomatoes
1 block grilling cheese
1/4 cup feta
1 T olive oil
3 T antipasto tapenade
salt and fresh black pepper, to taste

Preheat oven to 400.

Snap your beans and place on a prepared sheet pan, along with the tomatoes and garlic.

Drizzle with the olive oil, season with salt & pepper, and mix so that everything is evenly coated.

Cube the grilling cheese and nestle the pieces in with the beans.

Crumble the feta over the top, and place the pan in the oven, for about 20-25 minutes, or until browned. The beans will still have a good amount of bite.

Stir the antipasto through, and taste for seasoning.

Serve as a side dish, or mix with some pasta or gnocchi for a nearly-effortless dinner.
