Pouding Chomeur

This old Quebeçois recipe ("unemployed man's pudding") is a maple version of the classic English sticky toffee pudding, and is truly the perfect treat for a chilly night.

Ingredients:

1 cup maple syrup
1 cup cream

6 T butter, room temperature
1/4 cup sugar
2 eggs
1 t vanilla
1 1/2 cups flour
1/4 t salt
1 t baking powder

Preheat oven to 375.

Bring the maple syrup and cream to a boil and then remove from the heat.

Butter an 8" cake pan or any other small-ish baking dish.

Whisk together the flour, salt and baking powder.

Cream the butter and sugar.

Add eggs one at a time, then the vanilla.

Beat in the dry ingredients.

Pull the dough together into a loose ball, then refrigerate for a few minutes.

Cover the bottom of your buttered baking dish with some of the maple sauce.

Remove the dough from the fridge and shape to fit your baking dish.

Place in the dish and gently press to the edges so that it is evenly spread.

Pour over the remaining sauce, and bake for 40-45 minutes, or until the sides are golden and caramelized and the center is cooked.

Serve with cream, ice cream, whipped cream, or just enjoy straight from the pan.

Sliced apples or chopped walnuts scattered on the bottom of the dish before adding the dough are possible variations.
