Ginger and garlic provide a bright, spicy complement to a meaty swordfish steak.
Ingredients:
3 T freshly grated ginger or 1 t dried ginger
2 cloves garlic, minced, or 2 stems of green garlic, thinly sliced
2 scallions
2 T olive oil
2 T vinegar (white balsamic would be delicious here)
1/2 t peperoncini
Mix ginger, garlic, scallions, oil and vinegar and marinate swordfish for 10-20 minutes while you preheat the oven to 400.
Warm a cast iron skillet on the stove.
Sprinkle a generous amount of salt on the marinated fish and sear it in the hot skillet for a few minutes per side.
Slide the pan into the oven to finish cooking the fish; about 5-7 minutes more, depending on how thick your steaks are.
Serve with a fresh summer salad and enjoy!
