Turkey burgers can sometimes turn out bland and dry. By adding a little fat to the meat and finishing with a glaze, you end up with a great burger. Misty Knoll ground turkey already has a rich flavor, but by adding the miso you get a fuller, richer bite.
Makes 4 burgers.
Ingredients:
1 pkg. ground turkey (roughly 1.5 pounds)
1 tablespoon miso
2 cloves garlic, minced
2 teaspoons oil
For the glaze:
1½ teaspoons miso
1 teaspoon soy sauce
2 tablespoons maple syrup
In a bowl, combine the ground turkey, miso, garlic and oil.
Separate into 4 equal portions and form into patties.
To cook inside, use a heavy skillet and heat over medium until very hot. Swirl in a tablespoon or so of cooking oil and add the burgers.
Cook over medium heat without moving burgers until bottom side of each is dark brown and crusted, about 6 to 8 minutes.
Turn burgers and continue to cook for another 6 to 8 minutes.
If you are unsure about doneness use a thermometer poked from the side into the center of the burger – it should read 160 degrees.
The same temp reading goes for burgers cooked on the grill.
