Makes a great warm salad, or perfect bed for the protein of your choice.
Ingredients:
1 cup freekeh
2 cups water
2 cups chopped sweet potato
2 cloves garlic, minced
1 - 2 T olive oil
salt & black pepper, to taste
1 - 2 handfuls roughly chopped spinach
1/4 cup fiesta roja
1/4 cup pickled red onions
1 T vinaigrette (or just vinegar will work, too)
1 t (or more) zhug
Preheat oven to 375
Bring the freekeh and water to a boil, cover and reduce heat to low.
Place sweet potatoes and garlic on a baking tray, toss with oil and salt, then pop in the oven.
After 35 minutes, give the sweet potatoes a stir, add the chopped spinach, and return to the oven.
Check that the freekeh is cooked, then remove from the heat.
Once the sweet potatoes are cooked all the way through, remove from oven and build your bowl.
Mix everything together, test for seasoning, and enjoy.
