Easy Weeknight: Monkfish in Fresh Tomato Sauce

Try this simple recipe to bring out the best in "poor man's lobster".
1 lb monkfish filets
3 T olive oil
6 cloves garlic, thinly sliced
1 t dried oregano

2 containers Little Guys, roughly chopped
salt, black pepper & red chili flakes, to taste
2 - 3 T pesto (optional)
Warm olive oil in a cat iron skillet or pot.
Add garlic, season with salt, red chili peppers and oregano.
Preheat your oven to 400.
When the garlic is fragrant, add chopped tomatoes and simmer until they start to break down.  
Pat fish dry and season on both sides with salt and pepper.
Add a swirl of pesto to your sauce if you like.
When the oven is hot, remove half the sauce and nestle the fish into the pan.
Cover the fish with the rest of the sauce, and place in the oven. 
Bake for 15 -18 minutes, until fish is flaky and cooked through.
Serve with some roasted potatoes, rice or pasta.
