Easy Weeknight: Monkfish in Fresh Tomato Sauce

Monkfish is known as "the poor man's lobster" because it shares a similar taste and texture. Try it in this quick fresh tomato sauce for an easy - and economical - dinner.
 
  Warm some olive oil in a skillet and preheat your oven to 400.
  Thinly slice 4 cloves of green garlic and warm them gently in the olive oil with some salt and red chili flakes.
  Add 2 containers of roughly chopped Little Guys to the garlic. Let simmer while you prepare your monkfish.
  Warm 2-3T of high heat oil in another skillet and season your monkfish with salt and pepper.
  Fry the fish on high heat for a couple of minutes, until browned.
  Flip, then slide the pan into the oven for 15 minutes.
  Serve monkfish with sauce and a scattering of fresh herbs.
