Potatoes au Gratin

The ideal big-dinner side dish. Cheesy potatoes - yum!

Ingredients:

2 pounds gold potatoes, sliced thin
2 large onions, sliced thin
3 T butter
3 T flour
1 ½ cups half and half or cream
2 cups grated sharp cheddar, Gouda, or Alpine
1 T fresh thyme, or 1/2 t dried
salt and pepper, to taste
1 t paprika

Preheat oven to 350 degrees.and butter a 9” x 13” baking pan.

Cut the potatoes and onions into thin slices.

Place a single layer of potatoes on the bottom of the pan and scatter with onion slices, sprinkling with salt and pepper as you layer, to taste.

Repeat for 3 more layers or until you don’t have any more ingredients left.

Melt butter in a saucepan, then whisk in the flour.

Let that mixture cook for a afew minutes, then very slowy whisk in the cream, a little at a time.

Cook until thickened, then add the grated cheese, turn off the heat, and stir until the cheese has melted.

Pour the sauce over the layered potatoes, sprinkle thyme and paprika over top (and maybe a little more cheese if you like things extra cheesy).

Cover and bake for an hour, or until the potatoes are fork tender. For a crisper top, remove foil and bake for an additional 10 minutes.
