Cider Baked Beans

Let some cider turn any leftover cooked beans into everyone's favorite side. Add bacon or ham for a saltier kick.

Ingredients:

2 T olive oil
1 medium onion or 3 shallots, chopped
salt and pepper, to taste

1 T mustard
2 T ketchup
1 t 'nduja, or more, tot taste
1 t maple syrup
4 cups cooked beans
1 cup cider
3 T soy sauce
2 T cider vinegar

Warm the oil in a cast iron pot and preheat the oven to 325.

Season the onion or shallots with salt and pepper, then cook until softened, then add the mustard, ketchup and 'nduja, mix, and let everything get fragrant.

Add the syrup, beans, cider and soy sauce and bring to the boil.

Cover your pot and place the beans in the oven.

After 30 minutes, remove the beans and give them a good stir.

Place the pot, uncovered, back in the oven for another 10-15 minutes, until the beans have thickened and caramelized nicely.

Add the vinegar, taste, and adjust seasonings before enjoying with some roasted root veggies, sausages, eggs, chops, or however you like your beans.
