Black Chickpea Hummus

This is a subtly sweet, nutty-tasting hummus, excellent with crackers, chips or crudites.

Put into the bowl of your food processor:

1 cup cooked black chickpeas
1 T tahini
3 cloves of black garlic
1t balsamic vinegar
pinch red chili flakes
1 t salt

As you process, stream in sunflower or olive oil, or a mixture of the two. A tablespoon or two of water can also help make your hummus extra smooth.

Taste, adjust vinegar and salt, and process again.
