Berry Empanadas

DelSur's frozen dough discs make creating your own savory and sweet empanadas so much fun. Apples and cinnamon, pizza sauce and mozzarella, beans and rice - endless possibilities! For this version, simmer some frozen blackberries and blueberries together with syrup, honey or sugar for a sweet treat.


1 cup frozen blackberries
2 cups frozen blueberrries
2-3 T maple sugar, syrup, or honey (or more, to taste)
1 egg, beaten
sliced almonds and maple sugar, to sprinkle on top

Preheat oven to 375.

Simmer the frozen berries with your sweetener of choice until they break down. Taste and adjust sweetness.

Using a slotted spoon - those berries are juicy - put 2 heaping tablespoons full into each empanada.

Fold over and press the edges with a small fork to seal.

Brush each filled empanada with the egg wash, then immediately sprinkle with sliced almonds and a pinch of sugar.

Bake for 20 minutes, or until browned and bubbling.

Try adding a layer of sweetened cream cheese or chevre, or glazing with ginger syrup.
