Monti Verdi is a small company in Middlebury, VT, mindfully carrying on the traditions of the norcini, Italian butchers that used to travel from farm to farm in order to help the resident families make cured meat.
Stefano and Allesandra are not just the butchers, but also the farmers. All of their products are made with meat from their farm in Panton, VT. Their pigs are raised on pasture in the warmer months, and their diet supplemented with a special mix of grains in winter, yielding the most fantastically tasty cured meats. They guarantee happy, healthy pigs and undeniably great salumi.
