The honeynut squash was created when chef Dan Barber asked the plant breeders at Cornell University to create a smaller, tastier butternut. It is a cross between a buttercup and a butternut, but is smaller and sweeter than either of those. Dark and easy to caramelize; small and easy to handle - the perfect squash!
Store in a cool, dry place. As with all sweet squash, eat soon after buying, they don't keep as long as other winter squash.
