Freekeh is a traditional preparation of Durum wheat in which the wheat is harvested when the grain is still green and the straw and chaff burned away, giving it a smokey nutty flavor. Perfect for delicious grain salads.
This is whole freekeh, not cracked, and requires a longer cooking time than cracked (which is more like bulgur). Cook as you would rice; this freekeh is fresh and only needs a 1:2 ratio with water.
Store in dry storage, in a bag or a glass jar.
