Due to challenges of our Northeast climate, their apples are minimally sprayed to manage pests in an integrated practice with natural methods called Integrated Pest Management (IPM).
I recommend Champlain Orchards' Cider Syrup. It's an excellent product for all the uses described above. I use it to finish pork dishes, lightly drizzling Cider Syrup once the dish is plated. I also use it to add color and complexity to parsnip soup, or squash dishes. It works to enhance the flavors rather than overpowering them. Get it while you can. Goes great with winter dishes.
