Alpha Tolman is a firm, cave aged cheese reminiscent of hard alpine cheeses of Europe.

The flavor profile can vary depending on season and age from milky, fruit and nut flavors and a smooth mouthfeel to bold and meaty with amplified butter and caramelized onion flavors carried by a rich and crystalline texture. This cheese is dense and pliant, easily portioned and ideal for melting.
Alpha is made using the traditional Alpine methods of cooking and pressing the curds during cheesemaking to achieve a tight, elastic texture and robust, complex flavors. Fresh wheels are washed with a cultured brine to cultivate a rosy orange rind that imparts a funky depth to the ripening paste beneath.
While raw milk is used for this cheese, the cooking and aging process of cheese making substitutes for pasteurization.
Alpha Tolman is a Jasper Hill Creamery original, inspired by the classic Alpine cheeses of Europe with a modified recipe designed to showcase the cows and landscape of the Northeast Kingdom, Vermont. The name pays homage to a Greensboro Ancestor; Mr. Alpha Tolman, a philanthropic dairy farmer responsible for building the library and enriching his community with other noble works. Alpha's grandfather, Enoch Tolman was an original settler of our town.

This is my favorite cheese and I am THRILLED to have it back for purchase. I am frequently found in the kitchen slicing off a hunk of it and eating it just that way. I love the nutty flavor with crystalline texture. Might have to go slice a hunk right now !! Thank you Cellars at Jasper Hill.

This is a fabulous cheese. The flavor is complex enough to stand on it's own and pairs well with both sweet and savory elements.

This cheese is so tasty! As another review noted, the section closest to the rind is an absolute treat. It melts very nicely when grated into omelettes. It is excellent alone or on a fruit and cracker plate. It slices easily for sandwich-making. Everyone in the household loves it. It is not pungent or extreme in any way and it has a very "accessible" flavor that even my non-adventurous kid enjoys. Yet it is not at all boring. Alpha has become our home's new "standard" cheese.

This is one of my favorite cheeses. I love to take it for lunch, but it's hard not to eat it in one sitting.

This is the most wonderful cheese. Smooth and rich. The inside is wonderful, the part just next to the rind nutty and full. I've gotten to the point where I just scrape off the outermost rind to not waste any !!! Doesn't last long in our home!!!!!
