Make a large batch and store in the fridge so that it's always easy to eat a great salad.
Ingredients:
1 small shallot, minced
1/4 cup vinegar
1/2 cup olive oil
1 t dijon mustard
1 small clove garlic, microplaned (optional)
Add ingredients to a small jar, for which you have a lid.
Shake vigorously until emulsified.
Add salt and fresh black pepper to finish your salad.
