When tomatoes are in season and full of flavor and sweetness, making a quick and delicious sauce takes minutes.
Warm some olive oil in your cast iron pot, then add 2 cloves of minced garlic. Sprinkle the garlic with salt and red chili flakes and the leaves from 3-4 stems of oregano.
Roughly chop 2 pints of cherry tomatoes and add those to the garlic once it has become fragrant.
Let the tomatoes simmer until they break down into a sauce.
For extra flavor and protein, boil 1/4 cup of French lentils until they are al dente, then add to the sauce and simmer together for a few minutes more. Serve with any pasta, or pour over roasted vegetables and bake with some cheese for a great summer dinner.
