With oil-packed Bluefin tuna available, you can whip up an incredible salad using all local produce.
Ingredients:
3 cups of mixed salad greens, including kale and spinach
1 cup microgreens and/or shoots
1 cup green beans, sauteed in olive oil
4 soft boiled eggs, quartered
1 cup little guys, halved
1/2 cup chopped cauliflower pickles or olives
1 tin bluefin tuna
For the dressing:
1 finely chopped shallot
1 T mustard
2 T red wine vinegar
2 T olive oil
salt and fresh pepper
Arrange salad on a plate starting with a bed of lettuce.
Then add other ingredients in equal parts over the lettuce.
Save the oil from the tuna can and add that to your vinaigrette.
Dress the salad table-side and enjoy!
