A simple, satisfying and eminently packable treat.
Preheat your oven to 400 degrees.
Melt 8 T of butter
Add1/2 cup packed maple sugar to the melted butter, and stir to remove any lumps.
Once the butter has cooled slightly, add 1 beaten egg.
Mix in: 1.5 cups of flour
1.5 cups of rolled oats
1/2 t baking powder
1/2 t salt.
Combine until well mixed and there is no flour visible.
Line an 8"x8" pan with parchment paper and then press 1.5 cups of the mixture into the bottom.
Spread a jar of Quince Rhubarb preserves, or 1 cup of any jam, over the oat mixture.
Crumble the remaining mixture over the top. Mix in chopped pecans or almonds to extra crunch.
Bake for 30-35 minutes.
Allow to cool for at least an hour before lifting out of the pan using the parchment paper.
Slice and enjoy.
