Grilled Asparagus

An easy way to really enjoy the full flavor of fresh asparagus.

Ingredients:

1 pound asparagus, trimmed (snap off roughly the lower ¼ of the stalk)
1 tablespoons olive oil
salt, to taste
2 t cider vinegar
2 t dijon mustard
1 t honey or maple syrup
2 T olive oil
1 T finely chopped fresh dill
pinch of salt
a couple of good grinds of black pepper

Preheat a gas grill, or start a charcoal or wood fire, then brush the asparagus with oil and sprinkle with salt.

Place the spears on the hot grill and cook, turning them once or twice, until the thick part of the stalks can be pierced with a knife, 10 to 15 minutes.

Make the dressing: in a small jar for which you have a lid, shake together the vinegar, mustard, maple syrup and olive oil until emulsified.

Then add the dill and season with salt and pepper to taste and drizzle over the asparagus.
