This fantastic slaw is as delicious as it is beautiful.
1 savoy cabbage, thinly sliced
2 carrots, grated
1/2 cup (or more) Fiesta Roja
1/2 cup dried cranberries
1/2 cup sliced almonds
4 T olive oil
3 T cider vinegar
salt and pepper, to taste
Place the cabbage, carrots, cranberries and Fiesta Roja in a large bowl.
Dress with the olive oil, vinegar and plenty of salt.
Let sit for an hour or so, then mix again and check seasoning.
Add the almonds just before serving to prevent them being turned pink by the Roja.
This salad only improves with age, so make a double batch and enjoy all week!
