A lovely seasonal salad, full of crunch and bright flavors.
1 T maple balsamic vinegar
2 T extra-virgin olive oil or sunflower oil
1 t mustard
2 large apples, thinky sliced
1 medium head fennel, cored and thinly sliced
3 large ribs celery, sliced (about 1 cup; thinly sliced celeriac is great here, too)
½ cup cilantro leaves, roughly chopped or more to taste
In a large bowl, combine the vinegar, olive oil, mustard and maple syrup. Season with salt and pepper.
Add the apples, fennel, celery and cilantro. Toss until well combined. Taste and adjust seasonings.
