Easy Weeknight: Shakshuka

Eggs, eggs everywhere! Turn them into this healthy, quick dinner.

Ingredients:

2 T olive oil
1 small onion, chopped
salt and freshly ground black pepper, to taste
3 cloves garlic, minced (of 1/2 t garlic powder)
1 t 'nduja
1 t smokey taco seasoning
1 jar ugly tomato sauce
1 cup chopped spinach
4 eggs
1/2 cup crumbled feta


Warm the olive oil in a cast iron skillet, then add your onion and a good pinch of salt.

When the onion has softened, add the garlic or garlic powder, 'nduja and taco seasoning.

Allow everything to become fragrant, stirring frequently, then pour in the ugly sauce and simmer for 10 - 15 minutes.

Add the spinach, and simmer until it wilts.

Create 4 wells in the sauce and crack the eggs into them.

Cover the pan, and cook until the the eggs are how you like them, 5 - 8 minutes.

Sprinkle the feta over the top, test for seasoning, and serve with some great crusty bread.
