Quick pickling red onions is so easy, and the result is something that can raise any dish from mundane to joyful. Thinly slice one red onion and place in a jar. Melt 1 t of salt and .5 t sugar in 1 cup of hot water. Add 1 cup of white vinegar, and pour the mixture over the onion.
