This is nothing like baby corn out of a can... this corn is harvested early before it has fully matured, but that gives it extra sweetness. It comes still in the husk and is great in soups and stir fries.
Store in the refrigerator in a plastic bag until ready to eat.
These farms do not grow the new super sweet varieties popular at supermarkets but much prefer (as we do ) the old fashion sweet varieties such as Silver Queen, Sweet Rhythm, Butter and Sugar. These varieties are sweet, creamy and juicy and harvested before their sugars start to turn to starch. Sweet corn is best fresh, so enjoy within a couple of days of harvest for the sweetest flavor.
