This fish and shellfish is extremely fresh and literally right off of their small boats. All fish are caught using small scale sustainable methods such as hook and line and small gill nets, so that ocean and fish stock damage is minimized. Red's Best Fish is wild caught and never frozen or processed (other than cutting and packing). They are fresh caught on the Sunday or Monday preceding your order and best enjoyed within five days or they can be frozen. To thaw fish that has been frozen, place in a sealed bag in a bowl of cool water. Allow at least a day to thaw prior to cooking. Depending on the size and cut of fish, thawing times may vary.

"Dirty" Squid
I knew we would get your attention with this name. Really that is what the fisherman call this - as these squid are not skinned or cleaned. But what that means is that they are extremely fresh and the cleaning process is something that is actually very easy compared to other fish and seafood.
Squid are very seasonal and right now they are being caught by local dayboat fisherman up and down the coast.
