Spicy Maple Pecans

These nuts make a lovely gift or an addictive snack.


4 cups of raw pecans
4 - 5 tablespoons of maple syrup
1/3 cup maple sugar
1 - 2 t salt
1/2 t black pepper
1/2 t hot paprika
1/2 t ground ginger

Pour maple syrup into a large bowl. Set aside.

In a small measuring cup, combine maple sugar, salt, peppers and ginger. and stir until combined combined. Set aside.

Heat an iron or heavy non-stick frying pan over medium heat. Add pecans and toast for about 5 minutes. Be sure to stir or shake the pan constantly so the pecans do not burn.

Dump hot pecans into the bowl with syrup and mix immediately.

When syrup is evenly distributed over nuts, slowly sprinkle with sugar and spice mixture. Toss to combine. Taste and adjust seasonings; you may want to tweak the heat or the salt.

Spread out to cool on a cookie sheet lined with parchment paper.
