Soda Bread

Soda bread is quick to pull together, and deliciously crumbly. Enjoy with a strong cup of tea and generous swipes of butter and jam.

Ingredients:

4 cups flour
4 T sugar
2 t baking powder or bakewell powder
1 t baking soda
1 t salt
3 T melted butter
1 egg
1 3/4 cup kefir or buttermilk
1 cup raisins
3/4 cup chopped walnuts
butter to grease skillet

Preheat oven to 400.

Grease the bottom and sides of your cast iron skillet.

Whisk together the flour, sugar, baking powder, baking soda and salt.

Whisk together the egg and kefir or buttermilk, then whisk in the melted butter.

Stir the raisins and walnuts into the flour mixture, then pour in the wet ingredients and fold everything together.

Dust your hands in flour then use them to collect the shaggy dough into a ball.

Place the ball of dough in the prepared skillet, then use a knife to mark the top with an X.

Bake for 35-40 minutes, until golden brown on top and it the loaf sounds slightly hollow when you knock the top.
