A delightul and simple dessert celebrating fresh raspberries.
In a food processor or blender, mix:
5 cups of raspberries
1 cup water
7 T maple syrup
1 T lemon juice
Once thoroughly blended, press through a fine metal strainer and discard the seeds.
Pour into a freezer-friendly container, and put in the freezer for 1 1/2 hours.
Remove and whisk, breaking up any ice crystals that have formed and return to the freezer.
Continue to whisk every hour or so until the sorbet is smooth and scoopable.
Will keep in the freezer for at least a month.
