Jamie Miller's involvement in food started with washing dishes at a local Bar and Grill in high school and went up from there. He moved to VT in the spring of 1998 to attend NECI in Montpelier, and decided to stick around. After some time cooking in restaurants, he started a taco truck in Burlington. During the first year of the pandemic, Jamie's focus shifted to mixing is own seasonings and the blends were first sold in 2020. Much to the dismay of his two children, Jamie took a sawsall to the family hot tub in order to make room for his Taco Lab. Everything is created by hand in small batches from organic ingredients, using local produce wherever possible. And only one hot tub was hurt in the production process.
