The Chuck Roast is wonderful when slowly braised. It is a great value and has lots of flavor due to the abundance of marbling. Any roast that is not an even, round shape can be string tied for even cooking. One advantage to string tying your own roast is that you are able to season all sides of the roast with herbs and salt, or your rub of choice, allowing for the salt and flavor to be carried throughout the roast.

On weeks when we do not receive a new order your beef will be sent frozen, beginning the thawing process while en route to you and can continue the thawing process in your fridge and be enjoyed within a week.
