Morningstar Meadows grows this Hard Red Spring Wheat on their farm in Glover, VT and then brings it down to Elmore Mountain Bread to get it stone ground into whole wheat flour. Winter wheats generally have higher protein levels, and this year's wheat ranges from 14-16% protein. Morningstar Meadows utilizes wheat as a critical link in a healthy organic rotation of grains and legumes on their farm.

This flour is grown in Glover, VT and then is stoneground by a local bakers in Elmore, Vermont. Then, in a very ancient process, it is bolted (sifted) to remove just enough of the bran to transform this flour into something that Chad Robertson says "behaves like a whole grain flour with wings."

While I haven't cooked with this flour yet, my expectations are high! The flour is ground very finely, and it looks delicious! The BEST thing about this flour is that it is packaged plastic free! The bag is an unlined brown paper bag, sealed with a string! For that reason alone I prefer this flour over anything packaged in plastic. : ) So happy!
