These beans are nutty, earthy, and slightly sweet. When shelled and cooked, they are very creamy and similar to lima beans. Try cooking, then smashing them with a little salt, oil and vinegar and smearing on toast with ricotta and proscuitto. They make a stunning green pesto!
Store in the refrigerator.
Don't let any blemishes on the outside deter you; the edible part of a fava bean is protected inside many layers and will still taste delicious!
