Quick & Easy Einkorn Bread

Einkorn flour is light, nutty, nutrient-dense and highly digestible. It's also very easy to bake with. Our friends at Maine Grains have this simple recipe for "goatgrass" bread.

Ingredients:

1 ¾ cups (400g) warm water
1 ½ teaspoons (6g) active dry yeast
4 cups (375g) Maine Grains Organic Einkorn Flour
1 ½ teaspoons (10g) kosher salt

Combine the water and yeast in a large mixing bowl. Let rest for 10 minutes.

Mix in the flour and salt to form a wet dough.

Cover and let rise for 45 minutes.

Grease the inside of a loaf pan.

Wet your hands and transfer the dough to the prepared loaf pan. Smooth out the surface of the dough, filling the corners and edges of the pan.

Cover and let rise for 25 more minutes.

Preheat the oven to 350°F.

Uncover and bake for 40 minutes, or until golden brown on top. Let fully cool before slicing
