Escarole is in the Endive family and is a cool weather slightly bitter green. Similar in appearance to leaf lettuce, the greens are more rigid and hold up better in dressing, or can be gently cooked.
Store in a plastic bag in the refrigerator.
The outer leaves of the escarole are darker green, and as you make your way towards the center, the color lightens to a pale green. As the shade of green lightens, the bitter flavor also becomes less strong.
Since this is grown in soil please wash thouroghly before eating.
