Sweet Rowen's Mountain Ash is made in the same style as their Storm cheese but lightly dusted with a layer of fine ash for a piquant flavor. Some people are reminded of blue cheese as it suggests smoky flavors. It is not only delicious but absolutely beautiful on a cheese plate.
Store in the refrigerator.
Paul Lisai and his small but dedicated team are the folks behind Sweet Rowen Farmstead cheese curds and artisanal fresh and aged cow milk cheeses. Family owned and operated, they have a small herd of grassfed Randall-Lineback Cattle, a Vermont heritage breed specific to the Northeast Kingdom of Vermont. Paul maintains fresh pastures, grows hay for the winter months and milks the herd to provide their West Glover, VT and greater communities with creamy milk and delicious cheeses.
This cheese is smooth and flavorful without any harsh tang. It manages to be soft enough to yield easily but hold its shape and the rind is light. It's now one of my favorite cheeses.
