Golden cornbread is a traditional food for good luck into the new year. Serve with greens or beans or a hearty soup containing both!
1 cup buttermilk
1/4 cup melted butter
2 eggs
1/2 cup maple syrup
1 cup polenta
1 cup all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon butter for the skillet
Preheat oven to 425F.
Grease your cast iron skillet with butter and put it in the oven to warm.
In a large bowl, whisk together buttermilk, butter, maple syrup and eggs.
Whisk together the polenta, flour, baking powder & soda, and salt, then add to the wet ingredients and stir until a lumpy batter is formed.
Carefully remove the hot skillet from the oven, and our batter into it.
Bake 20-22 minutes or until golden brown.
