Easy Weeknight: Cheesy Sloppy Joes

Use a box of High Time's cumbles for a quick and tasty version of this old school classic. Ground turkey or beef will work, too, of course.

Ingredients:

2T olive oil
1 small onion, chopped
1 clove garlic, minced
1 carrot, chopped
1 box plant based crumbles (or pound of ground meat)
1.5-2 t 'nduja
1 cup ugly sauce
1/2 cup ketchup
1 T shoyu
1 T cider vinegar
1 cup grated mozzarella

Prepare the box of High Time crumbles according to directions. If using meat, cook in a skillet first.

Warm 2 T oil in a large pan, and add the onion and carrot when the oil is hot.

Cook until the onion is translucent, then add the garlic and 'nduja.

When everything has become fragrant and started to csramelize, add the crumbles or your cooked meat.

Stir and brown, about 5-8 minutes.

Add the sauce, ketchup, shoyu and vinegar and let simmer for a few minutes. Add a little water if it isn't as saucy as you'd like.

When you're ready to serve, add the grated mozzeralla and mix through.

Toast some buns and grab your favorite toppings and enjoy!
