Killer fajitas or quesadillas are easy with this simple sheet pan steak recipe. Skirt steak is best with a long marinade, so plan ahead and let it soak overnight for delicious results.
2 lbs skirt steak
1/3 cup oil
1/4 cup shoyu or soy sauce
2 T cider
1 T cider vingar
4 cloves, garlic minced
3 T Baja taco seasoning
1 - 2 small onions, sliced
In a large container which has a cover, mix the oil, shoyu, cider, cider vinegar, garlic and taco seasoning and shake well to combine.
Add the steak, shake again to cover the meat, then place in the refrigerater to marinate for 2 to 24 hours.
Remove from the fridge and allow the meat to come to room temperature when you're ready to cook it.
Preheat oven to 450.
Place the steak on a sheet pan and pour the marinade over over it.
Cook for 15 minutes, then remove and add the sliced onion.
Return to the oven and cook 15 minutes more.
Let the steak rest for 10 minutes before thinly slicing.
