Baked Apple Pancake

This is the breakfast du jour in my house right now; an easy way to get some eggs into kids who don't like them!

Ingredients:

3 eggs
1/2 cup milk
1 t vanilla
2-3 apples, sliced
3 T butter
3 T maple or raw sugar
1 t cinnamon
1/2 cup flour
pinch salt

Put the eggs and milk together in a bowl  and let them come to room temperature.

Preheat oven to 400

Warm a cast iron skillet over medium heat, then add the butter.

When the butter has melted, add 2 T of the sugar, the cinnamon, mix, and then add the apples. 

Gently cook the apples while your oven warms.

Whisk together the eggs and milk, then add 1 T maple syrup, vanilla, flour and salt and vigorously whisk until foamy, or for about 2 minutes. You can also use a blender or immersion wand for this.

When your oven has come up to temp. pour the batter over the apples, and gently slide the skillet into the oven.

Start to check after 12 minutes.

Remove when the pancake is impressively puffed, and serve immediately, with maple syrup, maybe some whipped cream, and some good black coffee.
