This lovely kabocha variety has pale blue grey skin and vivid bright orange, flaky flesh. Its sweet, complex flavor improves with age; feel free to keep this squash in storage for 2-4 months.

I split and roasted this squash with the plan of mashing it with butter and maple syrup. It was so sweet and flavorful that no additions were needed, just the mashing. Its texture had some more substance than, say, a butternut squash, so I wouldn't describe it as "smooth" -- a better description, it seems to me, would be hearty and satisfying.
