This variety has blue grey skin and bright orange flesh. It is most easily prepared by splitting and baking with butter and herbs.

This is a variety of kabocha squash, a Japanese winter squash that has a sweet, nutty flavor and smooth texture.

I split and roasted this squash with the plan of mashing it with butter and maple syrup. It was so sweet and flavorful that no additions were needed, just the mashing. Its texture had some more substance than, say, a butternut squash, so I wouldn't describe it as "smooth" -- a better description, it seems to me, would be hearty and satisfying.
