This special hybrid of a butternut and kabocha squash-- with beautiful dark green color, rich flavor and flaky flesh-- was bred in Japan but is well loved in Brazilian cooking, where it is known as Japanese squash or "abobora japonesa."

These squash are known for their hard skin and flesh before cooking so be careful when slicing the squash in half. They are wonderful in curries, used for tempora, or roasted and used as a mash in place of other starchy vegetables/ grains.

Best Squash Ever

We have been weekly Farmers to You customers for many years and yet we are still discovering great things among your offerings. This winter we ordered an Organic Tetsukabuto Squash, which I think came from Bone Mountain Farm. While we had recently grown very fond of FTY Kabocha squash offerings, this Organic Tetsukabuto Squash was even more unusual and just totally delicious. It was great as the core ingredient of a soup, great just mashed, great just baked and scooped off the skin. Not many things make us wish for that cold time of year, but this squash is certainly high on that list. While it takes some time to learn how to pronounce the name of this squash correctly, it does not take long to eat it up completely. We hope Bone Mountain Farm will grow and offer even more of this in the coming growing season.
