Farmers to You orders beef by the whole animal and it arrives fresh to us. On weeks when we receive a fresh beef delivery you will receive cuts that are fresh, not frozen. On weeks when we do not receive a new order your beef will be sent frozen, beginning the thawing process while en route to you and can continue the thawing process in your fridge and be enjoyed within a week. So sometimes the downside to humanely treated cattle for consumption (if that's not a contradiction in terms) is that the beef arising from such treatment is less fatty, less lush. Many of the traditional cuts of near meat, while flavorful, has a far less lush mouthfeel.
My favorites to purchase from FTY has been the ground beef, which is comprised of the trimmings of a wide variety of cuts. In burgers, it has great flavor and texture.
The other standout, though rare to see, are beef cheeks. Slow cooked, they have marvelous flavor and melt in your mouth.
This week is the first time not only have I cooked these beef baby back ribs, but the first time I have ever cooked ANY kind of baby back ribs from scratch.
These are deeply beef flavored, which is what you get with beef grazing on grass. But these also have a the right amount of fat to make them lush in your mouth. They might jabs been the best baby back beef ribs I've ever had.
One caveat, though. The photos show a rack with seven or eight ribs. I ordered three packages. One had five and the other two had six. But these ARE rich. Four or five per person are plenty for an entree portion for moderate eaters.
River and Rail is the gold standard for beef. Certified Organic, 100% grass fed on rich river bottom pasture, where the soils have been tended to for generations by farmers who care, and herd genetics that go back centuries. Red Devon are smaller framed cattle that grow healthy and strong on grass; the breed predates grain finishing of beef. These animals get plenty of fresh air and exercise, spending all their time out grazing. They are healthy and content.
As a result, the meat from River and Rail Farm is some of the best you can find anywhere, with wonderful, rich, nuanced flavor, excellent texture and just the right amount of healthy fat. This is not factory farmed beef, or cattle that has grazed where the Amazon rainforest once stood. If you’re going to eat meat, this is the healthy and responsible (and delicious!) way to do it.
