Unpasteurized Cow Milk
This is a washed rind unpasteurized cow milk cheese with a silky texture that is soft and supple, but not runny. The taste is tangy and buttery, and the unpasteurized milk makes for a wonderful complexity of flavor.
Store in the refrigerator.

This cheese is both visually beautiful and delicious. Very nice with ripe pears.
This is one of our favorite cheeses.
I like to steal bites of it whenever I'm using it just plain, but mostly, I use this to make a butternut squash and caramelized onion gallette that's been a huge hit with the family.
Good on toast, crackers, bread and just plain. I'm always looking for excuses to order this.
I adore this cheese. I'm often not a great fan of ripe cheeses, but this has big flavor without the too strong, almost ammonia-like smell of some. Whenever my husband or I try another cheese, we always end up wishing we were eating this instead!

Oma is a washed rind cheese that balances sweet, herbal and pungent flavors. The paste is soft and pudding-like and the rind is orange-hued with a layer of soft, white flora.
Sebastian Von Trapp named the cheese Oma (which in German means grandmother) after their grandmother Erika Von Trapp, who started the family farm 50 years ago. The farm has a herd of grass-fed, mixed-breed cows (the majority are Jersey), and is located in the small town of Waitsfield VT.
Before starting Von Trapp Farmstead, Sebastian learned his craft by training with a number of artisan cheese makers in England, as well as brothers Andy and Mateo Kehler of Jasper Hill Creamery. In fact, the brothers have formed a partnership around this particular cheese which is aged at Jasper Hill Cheese Cave.
