Sweet Rowen's Cow's milk feta is salty, firm and super tasty in pasta salads, eggs or with fresh greens.
Store in the refrigerator.
This cow's milk feta is on the salty side, but it can be rinsed or soaked in a bowl of water in the fridge to tame the salinity.
This is third product I've tried from Sweet Rowen Farmstead, and they are 3/3 on fantastic cheeses (the first 2 cheeses I tried were their curds and farmers cheese). At this point I would try anything they put out.
It is absolutely delicious. This feta is more complex, "umami", and less sharp than the "regular" fetas I'm used to, but also very salty, so be careful with the seasoning if you're making a dish with this. I would either use this cheese on its own, or put it in a dish where the feta is one of the star ingredients.

We enjoy this feta cheese crumbled over roasted beet salad or sprinkled over a farro bowl. It's not too strong and has a nice saltiness that adds a needed accent to many dishes.
This cows milk feta is delicious, melts beautifully on pizza. So so good!
