On weeks when we do not receive a new order your beef will be sent frozen, beginning the thawing process while en route to you and can continue the thawing process in your fridge and be enjoyed within a week. We source our 100% grassfed beef from Tilldale Farm and Little Lakes Ranch. Both farms raise Red Devon cross cattle on a 100% grassfed and grass finished diet. The beef is dry aged for at least a week before delivery to us.
Excellent beef tongue, and we appreciate that it is packed flat, making it easier to cook and slice. Tongue is a real treat for us and we hope to see it often among the offerings!
I'm glad that others avoid this cut because it's "gross looking". That's their loss, because tacos de lengua are amazing!
Beef tongue for tacos is stupid easy to cook in a crockpot and I've found that it doesn't even need much for seasoning. The only tricky/yucky part about this cut is that it's best to peel the skin off AFTER cooking.
I recommend serving tacos on All Souls Tortilleria corn tortillas (the BEST corn tortillas in Vermont!).
