This is the delicious ends of the belly that get trimmed up when the butcher produces the sliced bacon. The ends are all shapes and sizes so it's best to chop up and use in soups, stews or as a fat when sautéing vegetables if you want a great bacon flavor!
If you plan to cook this up within the week, keep it in the fridge. If you are not sure, then go ahead and freeze it. Thaw slowly in cool water before cooking.
These bacon ends come in 3/4 pound packages and all spices and flavors are real and naturally occurring - no nitrates, of flavor enhancers - why would you need them on meat that is this good.
