Sweet Potato Brownies

Just the right balance of fudgey and cakey, these brownies have very little fat, lots of protein and sneaky sweet potato helps make them moist.


1 cup pureed sweet potato
2 T melted butter
1 egg
1/4 cup nut or seed butter
2/3 cup maple syrup
1.5 t vanilla extract
1/3 cup cocoa powder
1/2 cup flour 
1/2 t salt
1 t baking powder
1/3 cup chocolate chips
1/3 cup chopped walnuts or pecans

Preheat oven to 350 and butter or line an 8" x 8" pan.

Add the sweet potato, egg, nut butter, syrup and vanilla to a medium or large bowl and whisk together thoroughly.

Add the cocoa, flour, baking powder and butter, and whisk again.

Fold in your mix-ins, then pour the batter into your prepared baking dish.

Smooth batter into the corners of the pan, then pop in the oven for about 30 minutes, or until firm to the touch in the middle.
