Simple Roast Chicken

Start with excellent ingredients, and the cook does not need to work very hard. Great roast chicken is easy using our fresh Misty Knoll birds.

Leftovers are perfect for sandwiches, burritos, ramen, casseroles, and salads.  Don't forget to turn the scraps and bones into stock for soup or other recipes. 

1 whole chicken
Salt and pepper

Preheat oven to 400. 

Wash chicken in cold water and dry it thoroughly. 

Sprinkle generously with salt and pepper. (If time allows, do this a day before and leave chicken uncovered in the refrigerator to produce even crispier skin.) 

Place chicken in a roasting pan and roast until internal temp reaches 180 degrees (about 15-20 minutes per pound).

Enjoy hot, warm or cold.
