Tart seaberries balance sweet maple syrup and apples in this scrumptious, nutty crisp.
6 cups of chopped apple
3/4 cup seaberries
1/2 cup maple syrup
2 t cinnamon
1 T grated fresh ginger, and its juice
1 cup rolled oats
1/2 cup flour
1/4 cup rye flour
1/4 cup maple sugar
1/2 cup chopped pecans
1/2 cup butter, room temperature
Preheat oven to 375.
Combine the chopped apples, seaberries, ginger, maple syrup and 1 t of cinnamon in a 9x13 pan.
Mix the oats, flours, pecans, sugar, remaining cinnamon and salt in a bowl.
Add the butter and work it through with your hands until everything is mixed and you have a relatively even, crumbly texture.
Sprinkle on top of the fruit mixture and bake, uncovered, for 35-40 minutes or until bubbling and golden brown.
Serve with ice cream, custard, or whipped cream.
